Dearest Porkie Pie left me 2 days ago. She was still eating and walking around as usual till the day she left. Even before she left, she was walking around, seems to be finding a perfect spot to go. I was checking on her the whole afternoon and she didn’t seems to be able to sleep. I knew she might just go that day. Rest in peace, Porkie.
Porkie Pie came to me when she was 6 months old. She was more active compared to Mikosan, her niece. Always ready to come out and play. She’s an expert in escaping, see how she did it below. She loves roaming around the room, chewing my yoga mat and even climbed up my mat which was placed vertically against the wall. Although active, Porkie posed for my camera. Really love her blur innocent look. However, she was kind of timid too. In an environment she’s not familiar with, she will panic and go into hiding. Oh boy, she loves to get my attention by shifting her furniture, toppling the wheel to escape, overturning her toilet and food dish. She loves getting a good massage from me, especially like it behind her ears.
Then she started bleeding a few months ago, brought her to the vet. There were a few possibilities, bladder infection, or female problem. As she was close to 1½ year old, I decided not to let her go for surgery. The bleeding goes on for about a month but she was still actively running and eating.
I hope she had left without suffering.

On a happier note, MikiSan is pregnant. Looking forward to her delivery.

It was the March holidays and a sunny day. And since it’s the holidays, I brought my nieces to Sentosa’s beach for a day of fun. The intention was also to celebrate Gladys birthday. We took Sentosa Express, the new light rail system from Vivo City. It was really fast and convenient and took only about 10 minutes to get to the beach station.
While walking to the Siloso beach, we passed by the Luge & Skyride. And the kids were game for a ride, and so was my mum! I was queuing for the tickets when my mum came to tell me that she’s going up with us. I was like, woah, mum, are you sure? She got abit nervous when we were about to come down in the luge cos she has never driven anything, not even a bicycle. And guess what, she was so excited after her first ride and wanted a second ride!

Got’cha! Nah, no sexy lady parading with a C cup bra here. Haha..
C is for Cupcake. Lovely-looking and delicious cupcakes. I love them for their petite size topped with colorful and interesting ways of decoration. They look so cute and you can decorate each little one of them with different variations. But sad to say, the icings and buttercream are laden with loads of sinful sugar and cream. Yes, I agree, they are for aesthetic purposes. Even my nieces find them too sweet.
I made these cupcakes in a lesson I attended last month at Shermay’s Cooking School, taught by Joycelyn Shu. Have your been to her blog? The food she creates is simply stunning. And she’s self-taught.
Being a novice in baking, let alone cupcake decorating, I couldn’t do the piping steadily. But I had fun rolling and shaping the marzipan and chocolate putty. They gets soft easily and would be hard to shape, so you got to work fast. I am pretty happy with the flower I’ve shaped.
The Valrhona Dark Chocolate cupcake was rich but not too sweet. I guess using good quality chocolate and vanilla extract/paste does makes a difference. I was tempted to get the vanilla extract but hesitated as I wasn’t sure how often I would bake. I didn’t bake as often as I wish I could as I only have a few supporters. Any extras will go into the bin eventually, what a waste. There are so many to bake and cook on my list.

Have been thinking of having a sinful rich brownie with vanilla ice cream for some time. Put it in front of me now and I will chomp it down with no regrets! Talk about my growing waistline. Haha..
Oh yeah, I didn’t know Cafe Cartel sells their cakes at 50% off after 9pm. Only for dine-in orders. We had 2 slices of cakes for the price of one. Yay! But service attitude is not that pleasant. We placed our order. And when the waiter served us the cakes, we told him they got one of the order wrong. He gave a pissed look. I know he’s not pissed at us, but with his colleague. I just thought that he shouldn’t have done that. Yes, he may be busy or stressed, but in the service industry, your smiles and attitude matters.

Zha Jiang Mian (炸酱面), a northen chinese dish, is a bowl of flat white noodles with a warm, thick and sweet minced meat sauce over it. It’s so simple to prepare, perfect for a busy afternoon. I like it with oodles of cucumber shreds for the nice crunchy feel. Some people like to add carrots shreds too. So it’s entirely up to your own taste buds. For the extra punch, mix the minced meat sauce with some chilli paste or chilli flakes. I love it with my mum’s chilli paste.

The recipe below are from Chng Kee. Peking Dip Sauce, 甜面酱 are easily found at the sauces section in supermarkets. Yes, it’s the same sauce that restaurants use for Peking Duck Skin, wrapped in crepes. I use Shanghai Handmade noodles which can be found at the noodles section. B eats them with instant noodles.
We were doing our marketing at a chicken stall and the stall owner gave us a very useful tip when thawing meat. Usually you will buy a whole chicken at the market and get the uncle to chop into pieces for you. For the 2 of us, we can’t finish the whole chicken at one go. So we separate them into a few bags before freezing them. Try to pack the chicken pieces into a single layer instead of a whole big lump, reason being, they will thaw alot faster. And this freezes the meat faster too, thus more fresh. We did the same for the minced pork. It’s really a breeze to thaw them.

Sweet Minced Meat Noodles, 炸酱面
2 tsp garlic/shallots, chopped
½ cucumber, shredded
200g minced pork
1¾ tbsp of Peking Dip Sauce, 甜面酱
½ tbsp oil
1 tsp light soya sauce
1 tbsp dark soya sauce
190g flat white noodles
30ml water (optional)
- Cook noodles in a pot of water. Drain and leave them aside.
- Remove core and seeds from the cucumber. Cut into thin strips.
- Heat wok, add the oil.
- Add garlic/shallots and stir fry until slightly brown.
- Add the minced pork and stir fry till the pork is cooked.
- Add Peking Dip Sauce, light and dark soya sauce.
- Add water and simmer if you prefer more sauce.
- Serve this meat sauce over noodles.
Serves 2. Happy Lunch!
